Several readers have asked me to post our meal plan each week. I’ve decided to try to do this on Saturdays. The recipes from these meals will eventually find their way to Go Gingham. My cooking is free form style and I just make things up as I go along.
This meal plan is from Monday, February 6, 2012 to Sunday, February 12, 2012.
Monday: Mexican vermicelli with black beans, corn, and tomatoes
Tuesday: leftover Mexican vermicelli
Wednesday: fish, quinoa, greens (sautéed Swiss chard)
Thursday: bean and cheese burritos
Friday: roasted chicken, brown rice, green salad
Saturday: whole wheat pasta with garlic sauce, green salad
Sunday: chicken noodle soup (made from leftover chicken)
We also had curry chicken salad sandwiches from the leftover chicken for lunches 2-days in a row. My son made dinner on Monday and my daughter made dinner on Sunday.

I have been trying to plan out my meals too. However, my dinners are elaborate and don’t really carry over well for lunch. I’ve been trying to figure out easy lunch recipes that I can make while I’m making dinner. Can you post your lunch schedule too?
Juvy, thanks for the question! I don’t do a lunch meal plan schedule (except when we’re vacationing or camping) but I do keep on hand food for quick lunches – tortillas, bread for sandwiches, lots of fruit and cut-up veggies (it’s easier in the summer to have fresh veg when it’s growing in the garden). We also eat leftovers from dinner for lunch, if they haven’t been eaten at breakfast. I also keep canned albacore and kippered snacks (smoked herring) in the pantry for lunches. When I made school lunches (which I don’t do any longer because my kids make their own lunches) I made lunches in the evening while dinner was cooking. My kids loved to eat peanut butter sandwiches, pesto/salami sandwiches, and beans or hummus. Hope that helps!
Yum! I wanna eat at your house. Tonight we are eating out…tomorrow quesadillas, Monday maybe spaghetti…I have never planned out a whole week of meals in advance. Two or three days is all I can do. have a great weekend!
