Weekly Meal Plan

Weekly Meal PlanAnother week, another week of meal planning and making dinners.  The freshest meal this week was Monday’s dinner.  The eggs were from our backyard chickens who are finally back into their routine of laying and the mustard greens were fresh from the garden.  The greens had grown all winter (meaning they hadn’t died over the winter) and we finally harvested them.

This meal plan is Monday, February 27, 2012 to Sunday, March 4, 2012.

Monday:  strata with greens

Weekly Meal Plan

Tuesday: whole wheat pasta with roasted red peppers and ground pork

Weekly Meal PlanWednesday: (leftovers) whole wheat pasta with roasted red peppers and ground pork

Thursday:  spicy lentils over quinoa

Friday:  fish chowder

Saturday:  (leftovers) fish chowder

Sunday:  roasted chicken thighs, brown rice and green salad

On Thursday, the lentils were so tasty (ok, that’s what I’m telling myself) I forgot to serve them over the planned quinoa and grabbed some fresh spinach and tossed that into the pan (instead of looking at my meal plan posted front and center on the refrigerator door!).  I didn’t realize my mistake until Sunday when my daughter was making dinner and asked where her spinach was for the green salad.  Oops.  We had to stop by the grocery store and get salad greens.  My son made dinner on Friday with fresh mussels from ABC Seafood.  If you live in Portland, you have to check out ABC Seafood – it’s better than a trip to an aquarium.

If you read our weekly meal plans, you know how often I cook with dried beans. About once a week, I cook 6-cups or 2 1/2 pounds of dried beans in our electric slow cooker that has a ceramic insert.  I love it because beans can cook whether I’m home or not or even overnight {Weekly Meal Plan}
