Weekly Meal Plan

Since it was Valentine’s Day this week and I was feeling so much love after writing about everything I loved, I baked a double layer cake, too.  The cake was quite good with ice cream and coffee the next morning.  It was gone before I could take pictures of it.  I have a feeling that was purposeful so that I’d make another one.

Weekly Meal Plan

This meal plan is from Monday, February 13, 2012 to Sunday, February 19, 2012.

Monday:  leftover chicken noodle soup

Tuesday:  {sweetheart’s dinner} whole wheat pasta and pureed roasted beets with roasted garlic, beef, and green salad

Wednesday:  leftover whole wheat pasta and roasted beets with roasted garlic, green salad

Thursday:  vegetarian chili with corn and tomatoes

Friday:  leftover vegetarian chili, green salad

Saturday:  fish, brown rice, and roasted asparagus

Sunday:  whole wheat pasta with marinara sauce (it’s the last jar of homemade sauce from tomatoes this past summer)

Because we had so much pasta leftover from Tuesday night’s dinner, we ate it again on Wednesday.  This was also because I forgot to soak the beans on Wednesday morning.  Thankfully, I remembered to soak the beans Thursday morning and with a few arrows pointing here and there on the menu plan that hangs on our refrigerator, the meal planning was back on track.

My son made dinner Saturday and my daughter made dinner on Sunday.  We wanted pork in the spaghetti sauce but all agreed that we’d had enough for the week.  Well, I agreed with myself that we’d all had enough meat for the week.
