Straight from the Earth Cookbook Giveaway

Straight from the Earth Cover

Happy April Fools’ Day! Today, I’ve got a cookbook giveaway for the latest cookbook from Myra Goodman. Myra co-founded Earthbound Farm Organic with her husband, Drew, and wrote the cookbook titled, “Straight from the Earth,” with her daughter, Marea Goodman. It’s a vegan cookbook with gorgeous photography and tasty, easy to make dishes.

This *meat*loaf recipe from “[amazon_link id=”145211269X” target=”_blank” container=”” container_class=”” ]Straight from the Earth[/amazon_link]” tastes excellent and that’s no April Fools’ joke! It’s so good even my meat lovers said, “Hey – this is actually pretty good.” Can’t ask for more than that from a meat-loving family!

Barley, Quinoa and White Bean Loaf

White beans ready to be cooked!
Skip the can on beans – soak, cook and freeze these for your recipes. That’s what I did for this recipe.

Ingredients

  • 3 cups vegetable stock
  • 1/2 cup pearled barley
  • salt and pepper
  • 3 Tablespoons chia seeds
  • 2 Tablespoons olive oil
  • 1 small onion, diced
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 2 garlic cloves, chopped
  • 1 teaspoon dried oregano
  • 1 1/2 cups cooked white beans (here’s how to cook white beans and freeze)
  • 2/3 cup dried whole wheat bread crumbs
  • 1/4 cup pine nuts, toasted and chopped
  • 2 Tablespoons fresh parsley, chopped
  • 1 Tablespoon Dijon mustard

Directions

  1. In sauce pan, bring 2 1/2 cups vegetable stock to a boil. Add pearled barely, quinoa and salt. Cook covered for 15 minutes.
  2. Preheat oven to 350 degrees.
  3. Prepare loaf pan and set aside.
  4. Mix chia seeds with remaining 1/2 cup vegetable stock and let them sit.
  5. Heat the oil in a large skillet (I used my cast iron pan) over medium heat, add the onion and stir occasionally. Add the carrots, celery, and garlic and saute for 2 minutes. Add the oregano, 1/4 teaspoon salt and pinch of pepper. Cook, stirring frequently until the vegetables are tender ~ 3-5 minutes.
  6. Add the beans to the large skillet with grains. Mash mixture with a potato masher until beans are partially broken up. Add the bread crumbs, pine nuts, chia seed mixture, parsley, and mustard. Stir until well combined. The mixture will be thick and challenging to stir.
  7. Season with salt and pepper.
  8. Transfer mixture to prepared pan. Press down and smooth out mixture. Bake until top is firm and golden brown, 45-55 minutes. Allow loaf to rest for 15 minutes before cutting it into slices and serving.
Straight from the Earth recipe
This was our dinner. It was delicious!

My notes for the recipe:

  • Use red quinoa if you can – it looks more like *meat* – just sayin’!
  • Look for barely, quinoa and chia seeds in the bulk food section – if you don’t have them on hand. That way, you only have to buy what you need.
  • I added Tabasco to the mix before putting it into the loaf pan.
  • We served it with a sauce – Best Ever Garlicky Tangy BBQ Sauce

  1. I’ve gotten so many good ideas from Go Gingham and have it posted as one of my Likes on facebook. My favorite meatless meal is a robust and hearty vegetarian chili that is so filling and satisfying on a cold, windy night.

  2. Hard to decide which meat-free meal is my favorite ~ there are so many to choose from! I guess that if I have to pick just one, I would say homemade vegetarian pizza for a cold weather dish and Killer Noodles for a warm weather dish.

  4. Favorite meat free meal? I love the black bean burger at a restaurant in Lake Oswego, OR. I’d love to find the recipe and make them at home. So far nothing comes close.

  5. Over the last couple of years, we’ve really tried to convert to a “meat sometimes” rather than a “meat most nights” household. We’ve both really liked it! Our favorite meals tend to be simple grain and veggie salads.

  7. I eat mainly vegan so it’s really hard to pick just one meatless meal. I have a fabulous recipe for vegan mac and cheese. Also I love bean salad, black bean tacos, grilled avocado tacos, etc….. I just love food! And I have “liked” your blog for a long time. I “liked” Earthbound Farm” also! Thanks for the chance to win!

  8. This is a tough one. If I’ve the time, eggplant lasagna. If I’m on the run, spinach and artichoke quiche–good for lunch or dinner (or breakfast in a pinch!)

  9. My favorite meat-free meal would be to make a frittata with vegetables I have on hand. Our family’s favorite vegan meal would be taco soup without meat, just a variety of beans and corn–sort of like chili, with crumbled tortilla chips on top, yum!

  10. This cookbook looks great! My favorite meat-free meal has to be a soyrizo (chorizo made from soy) meal my fiance perfected. It is so good and spicy, even meat lovers like it.

  12. My favorite meat-free meal is a veggie loaded pizza. If it needs to be vegan, I add a garlicky olive oil drizzle and red chili pepper flakes as a topper in place of cheese.
