I still meal plan in the summer – to keep my food waste down and to know what I should purchase at the grocery store – but I like to keep the meals simple and cook with what I can from the garden. My dinners tend to be cold ones, too, unless the plan is to cook outside or the weather is going to be cool and the house won’t get too hot with the oven on.
Our trip to Spain inspired us to make gazpacho this week. No cooking involved – just fresh vegetables in a blender. So easy and so fresh – it’s so good!
That’s my bike in the above picture. I was out for a bike ride and came across basil plants on sale so I bought a few. The basil needed a little TLC but is doing much better now!
Weekly Meal Plan
This meal plan is from Monday, July 23, 2012 to Sunday, July 29, 2012.
Monday: homemade coleslaw salad with stove grilled brats
Tuesday: summer dinner (this is a family favorite of ours that I’ll need to share soon…it’s a pasta salad and we call it “summer dinner”)
Wednesday: roasted chicken, quinoa, and green beans (from the garden!)
Thursday: bean and cheese burritos with chicken (leftover), guacamole, and fresh salsa
Friday: cabbage salad with shrimp and gazpacho
Saturday: cabbage salad with shrimp and gazpacho (leftovers)
Sunday: fresh corn salad with balsamic dressing and white beans with vegetables
My son made dinner Sunday night and thanked me for such an easy night! I had already cooked the beans so there wasn’t much to do but make the fresh corn salad. My daughter made dinner Thursday night and made the best guacamole ever. She said it’s a secret recipe but I’ll bribe it out of her!!

Yum! Your meals always sound delish and fresh! We’re doing homemade pizza tonite with a few surviving tomatoes from the garden. Had to make another batch of blueberry-banana muffins since someone gave us berries from their yard! Lots of farm fresh eggy dishes using eggs from our organic farming neighbors, LOVE! Did the best slow cooker pulled pork sandwiches with homemade slaw salad last week – Oh my hubby and I love this.
