This week’s meal plan went according to plan, mostly. Well, I forgot we had dinner group on Friday and our kids ate at home without us. My son had signed up to make dinner on Friday but I don’t like to assign a dinner for someone else to cook if I’m not going to be at home to enjoy it. I like to enjoy not being in the kitchen while food is still being prepared. I like to enjoy not cleaning up the kitchen because it’s one of the kid’s nights to cook. Plus, my kids like to have “junk food” when my husband and I go to dinner group. What’s junk food at our house? Annie’s Mac & Cheese. It’s the only food from a box that’s I really embrace and it tastes good.

This weekly meal plan is from Monday, March 5, 2012 to Sunday, March 11, 2012
Monday: fish, quinoa, roasted broccoli
Tuesday: split pea soup and whole wheat garlic toast
Wednesday: (leftover) split pea soup and whole wheat sourdough garlic toast
Thursday: pork loin chops and beet salad
Friday: vegetarian bean and cheese burritos with fresh salsa
Saturday: homemade mac & cheese and green salad
Sunday: (leftover) homemade mac & cheese and green salad
My son made dinner Friday night while we were at dinner group and made extra salsa so we could have it for lunch on Saturday. (I promised to have Annie’s Mac & Cheese on hand for the next dinner group!) My daughter made homemade mac & cheese with sliced tomatoes on top. I’m helping her write down the recipe and take pictures. She may be a guest contributor…

This beet salad looks amazing! I love beets. I used to help my mom can a zillion quarts of them every summer, I think i ate more than I canned! ; )

Thanks Sheila! This salad is so tasty and is a good way to convert a non-beet person into a beet lover! The horseradish can be tricky, though. The last jar I bought was extra strong and I only used 2 tsp or so in the salad. Add slowly because you can’t take it away.
