While our family stopped eating fast food several years ago, I’ve noticed the talking about fast food hasn’t really stopped. With billboards showcasing sandwiches that would entice practically anyone to steer into their drive-thru window lanes, my solution has been to make our own version of those fast food sandwiches at home in our little kitchen. Those billboards and the TV commercials taunt my teenagers’ appetites and we’ve come up with several cooked at home versions that would rival any fast food chain menu. I’m sure our sandwiches are much healthier and this week’s breakfast for dinner sandwich was the best!
Weekly Meal Plan
This meal plan is from Monday, November 12, 2012 to Sunday, November 18, 2012.
Monday: homemade vegetarian pizza with mushrooms and spinach
Tuesday: fish, quinoa, vegetables
Wednesday: breakfast sandwiches with eggs, cheese, and pork sausage and fresh squeezed orange juice
lentils over vegetables pinto beans, brown rice and fresh salsa
Friday: roasted chicken and roasted cabbage
Saturday: roasted chicken and roasted cabbage (leftovers)
whole wheat pasta with puttanesca and green salad birthday dinner for my son his choosing – white, bow tie pasta noodles, fried chicken strips and zucchini
My daughter made dinner on Wednesday and cooked up our breakfast sandwiches. It was easy for her because I had made the pork patties the previous week. By adding spices to bulk pork, I shaped the patties and froze them. They weren’t sausages but were in that same shape. It was a great way to have them keep their shape by freezing them. I didn’t cook them before freezing them.
My son made dinner on Friday night. He oven roasted chicken and oven roasted cabbage but not together. He was supposed to make dinner on Sunday but his birthday is next week and it worked best to celebrate it on Sunday rather than Thanksgiving week. I can’t believe he’s turning 16-years-old! It seems like yesterday he was a baby.

I will be trying your hint on “glass jars and how to get them ready to re-use.” I have been saving heavy glass jars that once held a locally-made salsa to use for the granola I intend to make as Christmas gifts. I had been making muffins, but the granola seems like much less standing time on my bum knee.
Karen, the granola gift is lovely and I’m sorry you have a bum knee! You don’t have to stir the granola at all. Honestly, sometimes I leave it to cool in the oven (with the oven turned off) so that it’s extra crunchy and chunky (that’s how my husband likes it) and I’ve forgotten it’s in the oven. The next morning, I find the granola and remember I was going to put it into jars before I went to bed!
